Southwest quinoa salad

Southwest Quinoa Salad

1 1/2 cups quinoa
1 1/2 cups black beans
1 Tbsp red wine vinegar
1 1/2 cups cooked corn
3/4 green pepper, chopped
1 jalapeno, chopped
1 tsp coriander
juice of one lime
1/2 pint cherry tomatoes
2 tsp cumin
1-2 Tbsp olive oil
salt to taste

Mix all ingredients. Season to taste. Can be served cold or heated.

I also enjoyed it as part of a spinach salad.
