I'm not a big pancake fan, but one morning I had a craving. There's a box of Aunt Jemima in the cabinet, but I wanted to try to make them somewhat 'healthy' (or "healthified" as an email I got said about some pumpkin cheesecake recipe - what a word). They were also quite tasty!
The recipe makes one serving of two large pancakes.
Whole Wheat Pancakes for One
1/2 cup whole wheat flour
1/2 Tbsp ground golden flax seed
2 pinches of salt
1/4 Tbsp baking powder
1/4 Tbsp brown sugar
1/4 tsp cinnamon
1 cup milk
1/4 tsp vanilla
1/8 cup chopped walnuts
oil or butter for pan
- Mix dry ingredients together in a bowl until well combined.
- Add vanilla to milk and mix.
- Add milk mixture to dry ingredients and mix until just combined.
- Fold in nuts.
- Cook over medium.
