twd ~ Great Grains Muffins
Thanks to Christine of Happy Tummy for the great pick this week! This was one that I had highlighted as a possible pick for my turn. I didn't end of picking it, so I'm very excited to get the chance to make it now.
I hardly ever make a full recipe for twd. Since we bake every week, I like to downsize the servings by at least half, usually by three-quarters. But this week, I made the full recipe because I knew I was going to love these!
As much as I did love these, I would like them grainier. I can't pick out the oats at all, though the cornmeal adds a nice, subtle taste. I love prunes so this gave me a great excuse to buy them.
In the cookbook, Dorie's picture shows the muffin with a nice chunk of (what looks like) cheddar cheese. I haven't tried that yet, but I think it'll be great!

Your muffins look great Amber. You are the only person to use prunes that I have seen so far. Glad you liked these - I liked them too and I am not sharing them.

Your muffins look awesome--the prunes didn't sink to the bottom like my raisins did! And I know what you mean about not being able to pick out the oats--I was thinking that too.

I used rolled oats and they had a definite texture. Some grated cheese would have been tasty too. This recipe cries to be made over with every addition. Glad you enjoyed yours!
Grainer would have been nice! I added flax seed to mine. Im glad you enjoyed them,they look very good! I will use the prunes next time.
I agree about making them grainier! Now that you mention it, I didn't notice the oats either. Where did they go?
Mmm, these look fantastic and prunes would have been so perfect. I went with chocolate chips and dried blueberries, and they were nice.
