twd ~ Coconut Tea Cake
After my mom's birthday this weekend, I'm all caked out. But I still had to make this one. It's coconut, and Dorie gave a "Playing Around" option to add spices. So I made it tonight before I went to kickboxing class, and had a piece when I got home.I'm planning on eating this as a breakfast loaf. I can't wait to try it with strawberries tomorrow morning. It is a bit dry and not too sweet, which is why I would never make it just as cake. Pecans would be a good addition. The top has a lovely golden crunch to it. I love the added black pepper, cardamom, ginger, and cinnamon. The spices aren't overwhelming as I thought they might be. The coconut milk still comes through in a subtle, addictive way. All in all, a great pick by Carmen of Carmen Cooks.

Yum, the pecans sound like a great addition! I'm glad you enjoyed this. Thanks for baking with me!
great texture! i can SEE the coconut in yours!
I like how you can see all the goodies in your bread. I was hoping for a little more flavor too.
Yes, pecans do sound good. I added orange and ginger, it was delicious!
yours is the first picture where i can actually see some coconut poking out ;)
Wow, yours is the first coconut tea cake where the coconut is visible - very nice! =) You picked out some great spices, I never would have thought of black pepper! I agree with you, I do think the cake gets a little more moist the next day.
ooh, sounds yum! I love pecans :-)
Yes, pecans would be wonderful. Toasty ones please. :-) The spices sound quite interesting. Wish I could sample yours.
Yum, that looks like a great variation! I like the idea of this as a breakfast treat rather than a cake.
Lovely cake! The pecans and spices sound great :-)
I wish I had read this before I put mine in the oven! Pecans would have been great! Yours looks wonderful with all that yummy coconut peeking out. :)
I love the spices that you added to your cake. They sound like amazing flavor additions. I made the mocha bundt this week because I was out of coconut milk. I love reading the posts for this cake because I'm getting some wonderful ideas.
I really like that you can see all of the coconut in yours! Nice job.
It looks wonderful. Sounds like a great breakfast to me!
Ooh, I like the idea of adding pecans. Next time!
Wow, I love the texture of your cake!! Here in The Netherlands they only sell superfine shredded coconut...
I love that texture - sorry it was a bit dry for you. It looks fantastic. Love your spice choices too - those can be so risky. I don't think I saw any "spice" variation this go around. I went RUM! Nicely done!
i love the addition of all the spices you added!
i loved the cakes subtly too. i made mine tonight to post on tuesday. (added grapefruit juice and zest!)
YUM!
